Professional Japanese Series Yanagiba Sub-Zero

Mac’s yanagiba in a partially western-style version. It features a substantial pakka wood handle and Mac’s excellent sub-zero tempered steel. The knife remains sharp for an extremely long period of time. The blade has a chisel ground edge and it exists in a right-handed and a left-handed version. It is suitable both for home and professional cooking. Do you frequently slice carpaccio? Do not wash in a dishwasher!
